Happy July 4th weekend to all! I wish July 4th always fell on a Thursday so we could have a four-day celebration every year. Over the last three days, I have enjoyed morning strolls on the beach, afternoon naps, chocolate-dipped frozen yogurt, and explored a few boutiques. We had a very traditional All-American feast on the 4th and watched the fireworks on a breezy beach with family and friends. We could see three different firework displays from our location on the beach, which was just incredible. Sadly, this weekend celebration must come to an end, but I have some good news for you going into this week. This Wednesday, 10 July is National Pina Colada Day and even better, a personal favorite of mine, Friday is National Pecan Pie Day. I plan to treat myself to a mini pecan pie this Friday, 12 July. Until then, a few more glorious hours of rest and relaxation on this Sunday.
A few suggestions for the week ahead. Have a leftover watermelon? After all the heavy meals I consumed this weekend, a light watermelon salsa will make a great Sunday night meal over chicken or fish.
Take an evening stroll in a new part of town on Wednesday and discover a new restaurant, coffee shop, or book shop.
Walking to Pie Sisters in Georgetown on Friday is a good idea. Or you can just drool over their gallery! Even better make your own pecan pie from scratch, crust and all! They sell both classic Pecan and Bourbon Chocolate Pecan.You can order individual cuppies or larger pies to share.
